Ingredients
2 Tbsp. Tex-Mex Fajita Seasoning Mix
4 boneless skinless chicken breasts, cut into thin strips
2 bell peppers, seeded and cut into strips (one red and one green - or your choice)
1 onion, sliced
½ cup chicken broth
1 Tbsp. vegetable oil
4 flour tortillas
Instructions
Place tortillas in aluminum foil and heat in the oven at 200 °F.
In a large skillet, heat oil, then cook the chicken strips over medium-high heat, stirring constantly, for 5 minutes. Add vegetables and cook at medium heat for another 5 minutes or until vegetables begin to soften. Add Tex-Mex Fajita Seasoning Mix and chicken broth, stir and continue cooking for another 5 minutes, stirring often.
Serve immediately, in the warm tortillas.
Top with your favourite toppings; sour cream, salsa, cheddar cheese and guacamole.
